Vegan Cinnamon Apple Pancakes

Vegan healthy pancakes.

This is an easy recipe for tasteful vegan pancakes with cinnamon apple. It's perfect for a light breakfast or if you want to eat some healthy sweets.

If you are looking for the pancakes recipe without eggs or dairy and still want to have pancakes with the same texture as original ones, this recipe is perfect for you. To make it even better, I decided to add some apple with cinnamon.

Recipe

With this recipe, you will get about 16 pancakes which can last about four days in the fridge. To do our healthy sweets, we will need:

  • 1 cup of white whole wheat flour (about 120 gram)
  • Baking powder (about 1.5 of teaspoon)
  • Salt (0.25 of teaspoon)
  • Cinnamon (about 1.5 of teaspoon)
  • 1 apple (can be small)
  • Melted  coconut oil (1 teaspoon)
  • Vanilla extract (2 teaspoons)
  • 0.5 cup of non-dairy yogurt alternative
  • 0.6 cup of unsweetened cashew milk
Healthy pancakes can be also eaten with syrup.

Preparation

Let's start by preparing the apples. Firstly cut it into small pieces and preheat your pan on medium heat. Add the apples, then sprinkle it with the cinnamon. Cook it for about 5 minutes stirring apples frequently.

Now it's time for the pancakes. Whisk together some cinnamon and salt, baking powder nad flour. Get another bowl and put inside vanilla, milk, coconut oil, and yogurt. Stir it all together.

.Overheat your pan over low heat. Using tablespoon put your pancakes from the bowl to the hot pan into circular shapes. Cook it for about 2.5 minutes, then flip it and cook it for another minute or two.

After putting your pancakes on the plate, top it by the apples. You can also serve it with syrup.

Additional tips

  • You can also use vanilla flavored non-dairy yogurt alternative
  • Gluten-free flour should also work
  • Pancakes can be easily freeze
  • Nonstick pan is much better than steel ones, which can burn your pancakes
  • Low heat also can prevent you pancakes burn
